Barbecue Chicken Muffins

November is Old or New Favorite Family Recipes.  And this month I want to share with you how to make barbecue chicken muffins - a favorite while watching football!  And don't forget to please visit all of the co-hosts' blogs below for more awesome recipes:

Since it's Fall, Sundays are usually filled with watching football in most households including mine. So I pretty much fix something that's tasty and easy to handle - in other words, no-fuss food!  A favorite in my family - and one that I like to make is Barbecue Chicken Muffins. And the best part, you can use already cooked rotisserie chicken to make it! And if you want an extra kick - substitute hot sauce for the barbecue sauce!



Instructions:
1.  Preheat oven to 400 degrees. Saute chopped onions in butter over medium heat until transparent.

2.  Toss chicken with barbecue sauce and add to cooked onions.

3.  In large bowl, whisk together egg, milk and dressing, add to biscuit mix, stirring just until moistened. Fold in 1 cup cheese, and chicken mixture.

4.  Spoon into 12 cup greased muffin pan. Sprinkle with remaining cheese. Bake 25-30 minutes until a toothpick inserted in center comes out clean.

5.  Cool 5 minutes before removing from pan to a wire rack. Serve warm with additional dressing and sauce, if desired. Enjoy! 

Easy peasy!  And a great finger food for watching the game!
